Cranberry Walnut Relish – a beautiful to look at and flavorful recipe from my dear friend Jamilya. The moment I tried this relish, I knew I needed to have this recipe, and my friend was kind enough to share it with me and give me some tips as well. Made with fresh cranberries, apples, oranges, and walnuts, this relish is a great addition to meat dishes, but if you are a vegetarian, I am sure, it will beautifully compliment meat substitutes as well.
Half the amounts of the ingredients to make a smaller batch.
Prep: 15 min ย Rest: 2 hrs ย Total: 2 hrs 15 min
Ingredients
2 lbs cranberries
1 large apple, peeled, cored, and chopped
1 medium orange, peeled, and sliced
3/4 to 1 cup unrefined sugar
salt to taste
1 cup walnuts, chopped
1 package berry or cherry jello
3/4 cup berry or cherry juice
Directions
In a food processor, blend the cranberries, apple, and orange until the mixture has grainy consistency (Be careful not to over-process). Add the sugar and the walnuts. Mix well.
In a small saucepan, combine the jello and juice. Bring to a gentle boil, stirring until the jello is completely dissolved. Remove from the heat and stir into the cranberry mixture. Place into the fridge for at least 2 hours or preferably overnight to set.
Serve as a side.
