Oatmeal Cookies

Made with oats, whole grain flour, walnuts, and coconut oil, these cookies are a healthy alternative to plain oatmeal cookies. They are easy to make and are ready in no time. Bring them to a Cookie Exchange Party and they will go quickly, or have them as a snack with your afternoon coffee or tea.

1 cup quick-cooking oats

3/4 cup whole grain flour

1/2 tsp ground cinnamon (optional)

1/2 tsp baking soda

1/4 to 1/2 tsp salt

1/2 cup unrefined cane sugar or brown sugar

1/2 cup coconut oil or butter

1 egg

1/2 tsp vanilla extract

1/2 cup walnuts, chopped


Preheat the oven to 375 F.

In a medium bowl, whisk the flour, cinnamon, baking soda, and salt. Stir in the oats and set aside.

In large bowl cream together the oil and sugar. Whisk in the egg and vanilla. Add the oat mixture into the bowl. Mix until all the ingredients are incorporated. Fold in the nuts.

Drop by heaping tablespoons, 2 inches apart, on a parchment paper lined baking sheet and slightly flatten. Bake for 14 minutes until lightly browned, rotating the baking sheet half way through the baking process. Place the cookies on a cooling rack immediately.

Serve with tea or coffee.
