Roasted Pepper Guacamole


A delicious alternative to traditional guacamole is guacamole made with roasted pepper and freshly minced garlic. Try it out! You won’t regret it.

2 large avocados, peeled and pitted

1 large green pepper (I am using an Anaheim pepper with mild to medium heat)

high heat oil for brushing pepper (avocado or light olive oil work great)

2-3 garlic cloves, minced

1 tbsp olive oil (optional)

1 tbsp lemon or lime juice

2 tbsp cilantro or dill, chopped

salt and pepper to taste


Preheat oven to 400 F.

Place the pepper on a baking sheet. Brush it with the oil, and salt it. Roast in the oven for 10-12 minutes until slightly charred on the outside. Remove from the oven. Place it in a bowl, and cover with a plate or plastic wrap so that the skin comes off easily. In a few minutes, take the pepper out of the bowl, and peel the skin off. Cut it in half, and scrape the seeds and cut off the top; then finely chop it.

Chop up the avocado, and place it in a bowl. Mash it with a fork.

Add the pepper, garlic, oil, lemon juice, cilantro, salt, and pepper to the bowl. Mix well.

Serve with chips.
